Lime is round and slightly elongated, belongs to the family of citrus fruits and therefore shares many of the characteristics of other citrus species, such as having a thick skin. The pulp is pale yellow in colour, juicy and has an acid taste divided into segments. The color of the rind is yellow and especially bright when ripe.
Used in fresh for culinary purpose and its juice for the food processing industry. In the pharmaceutical industry is raw material for the manufacture of numerous medicines and at home is used for numerous home-made remedies.
It is a fruit with very similar characteristics to other citrus fruits due to the fact that its skin and pulp are similar though the colour and flavour of both are totally opposite, especially if we compare it with the most representative fruit of this family, the orange.

This category includes firm, well-formed, soft-textured Tahitian lemons that are free of disease and cold damage. Each fruit must be green in colour on at least the ¾ parts of its surface. The texture should be smooth and not affected by low temperatures. Under this grade the product must have a juice content of not less than 42% of its volume.
-U.S N° 2.
Includes fruits that are relatively firm, not very rough and free of disease, mechanical damage; cold damage; burns, dirt or discoloration. 50% of its surface must have a greenish colouring. Only 10% may not meet the color and grade, and a maximum of 5% for diseases.
-U.S N° 3.
Combination. -It is a combination of grades 1 and 2; the fruits must meet at least 60% of the rules of US No. 1. Lots that are very pale are designated "US Combination Mixed Color", and those that are yellowish from normal ripening are designated "US Combination Turning".
